Joys of the Season – December Challenge / Post 4 – Festive Soups

Who doesn’t love a good healthy soup, especially when they can warm you up on a cold day, taste so yummy, and look so festive! Making a large batch can become an excellent family meal when adding a side of bakery bread or speciality loaves (olive bread is AMAZING!).

This time of year, many root vegetables are so affordable! Soups are also simple enough to make and cater to the vegetarians in our lives. Just pick your favorite veggie, boil or roast, and some vegetable stock and some herbs or spices, simmer and voila! Ready for sharing!

Today I made this delicious carrot, ginger, and cilantro soup. The picture below was taken seconds after serving it to the kids. It was a big hit!

The recipe is quite simple and you can add anything extra to your taste. I boiled the first three ingredients and then used a hand blender to purée the mélange. I then added the vegetable stock, a bunch of cilantro, pepper and puréed the mix again. I did add some milk for extra creaminess and added extra cilantro as a garnish. Here is the list of ingredients:

  • 5 lbs of peeling and boiled carrots
  • 3 teaspoons of fresh ginger
  • 2 cloves of garlic
  • vegetable stock
  • fresh cilantro
  • pepper
  • milk (if desired)

The best part is that there are leftovers for lunch tomorrow! Yummy for my tummy! I hope you enjoy your own soup creations with your loved ones over the holidays!
